Sukiyaki is a classic Japanese hot pot—born in the late 19th century—featuring thin-sliced beef simmered with vegetables, tofu, and noodles in a sweet soy broth, and enjoyed across Japan as a warm, celebratory family dish. We prepare it with all the traditional elements: beef, shirataki noodles, tofu, napa cabbage, onions, mushrooms, and a savory-sweet sukiyaki sauce.

How to Cook and Eat Sukiyaki

Before you begin:
Set up a table-top stove and a 1½–2 inch deep cast-iron or heavy-bottomed pan.
Arrange all the sukiyaki ingredients on the table so everything is ready to cook.

1. Prepare the egg dip

Crack an egg into a small bowl (4–6 oz) and whisk until the yolk and white are fully combined.
(Use pasteurized egg if preferred.)

2. Heat the pan

Heat the pan over medium-high heat on the table-top stove.
When the pan is hot, lightly oil it (or use a small piece of meat fat if available for richer flavor).

3. Start cooking the ingredients

First, sear one or two slices of meat briefly—this adds flavor to the pan.
Then add the vegetables, tofu, mushrooms, and shirataki around the pan.
Pour in about 3–4 oz of sukiyaki sauce and let everything come to a gentle simmer.

4. Cook and eat as you go

Add more meat slices and cook them to your preferred doneness.
Once a piece is cooked, dip it into the egg mixture before eating.
The vegetables and tofu will finish cooking shortly—dip those in the egg as well if you like.
Add more sukiyaki sauce as needed to adjust the seasoning.

5. Finish with udon (“shime”)

When most ingredients are eaten, add udon noodles to the remaining sauce.
Pour in any leftover sukiyaki sauce if needed, season to taste, and simmer until the noodles are hot and coated with the rich broth.
